Right click on the ability, and it will tell you what effect it has on your character: I made the mistake of giving my first gadgeteer 100 dex, only to [belatedly] read the description, and find out that it doesn't have any effect for them.
For fighting characters, strength and dex are biggies, but if you want critical strike, you also need senses. Speed can effect your armour class, int even helps them hit more. For magic users, Piety is most important for priests, Int for mages and psions, Dex for alchemists. They all need enough vitality to keep from dieing when a spell backfires, and its a good idea if they have enough speed to occasionaly get their turn in combat while the attackers are in a nice tight group. Most stats come with a 'bonus' skill once they have hit 100: Iron will, power cast, power strike, snakespeed, etc. One of the things that makes this game so much fun is the near infinet ways you can develope your characters. I know that max STR give you Power Strike and max VIT give you Iron Skin.
Can I have these "special ability" with anyone who reach 100 pts ? (I.E. Mage with 100 STR will have Iron Skin (not really usefull but just for my info)) What is the other ability you can get when you max Piety or Sense, etc ?(I don't remember all the ability) |

Jandrall's site has some excellent writeups by AtlusSeven on character development. He talks about which ability points are best for each class.

Also to help you decide - you can right click on the skills to see which attributes control them. The first one listed will have a much heavier impact on the skill. So depending on which skills you want and how important they are to you you can pick which stats to raise that way too.
The items on Jandrall's site are a good point of reference but don't use them as a bible. I would ask more specific questions to the board here as you'll get a better scope of answers.
