I've just completed all 11 discs. What should I do next? Maybe Elven Sorceress? Gnomish Kensai? Orcish Necromancer? Resume my life? Who knows?

I'd suggest you try gimping yourself next time you play, start BG1 with all your stats at 10 or there abouts, or how about limit your stat point's to a max of 10 per stat, so for a druid who has to have a wisdom of 14 or so you'd have to take 4 off the other stat lines..
just an idea, can be quite fun.
