I think single class is the way to go, i prefer to specialize at one thing rather then knowing a bit of everything but being good at nothing.

Yes but this is 3rd edition, you can pick up a level in sorcerer and then continue with your ranger.

3rd edition has indeed very few limits, so you can play like the first 5 lvls as a mage, then 5 as thief and them another 5 as a mage?
You can switch wenever you like?
