If you max out your chars, it's doable. Not easy at that level, but doable. Helps if you pick pocket him first though

In BG1 he still keeps his items if you pickpocket him, its a bug. And for your question on how he comes back, he just comes back beacuse well just beacuse. Kinda like I never used Minsc in BG1, but it assumes I did beacause hes in the dungeon right next to you.
