I think the wolf is usually found in the SW part of the map although I could be wrong.

There isn't necessarily any specific wolf that you have to kill. Even when you travel to the gnoll stronghold, sometimes you may be waylaid by a wniter wolf. The whole winter wolf quest isnt really a one time deal, but more just an avenue where you can pawn off the skin of an animal for a decent chunk of change. As far as any specific wolf, pritchke is correct in that the wolf is usually in the soutwest portion of the map.

I personally believe that the snow is a tip off that a wolf is nearby...I find that when it snows way down south below the Mines then usually I get attacked by a wolf not long after.

just rest alot in that area till one appears and attacks you, its the highest chance mob in that area to attack a rested party in the south from what i seen, i killed tons of the things, easy kill, good exp, 500 gold pelt
