Should I keep old/broken armour (found that way), amber hulk hide and Rhino beetle shell or should I just discard them (no way of making some good armor out of this???)

I am sure that the old, broken armor can be discarded. The Umber Hulk hide and the Rhino beetle hide can be made into armor, but I never even cared to try for it. It wasn't that big of a deal in my case.

You can get the evil dwarf to make the rhino shield then get the evil elf to enchant it. It's not the best shield in the game but I think that Druids can use it.
