Yes, I posted this at BG1 forum, too. And got little replies.
Ease-of-Use turns off item stacking limit and mutual excluding of rings/amulet/cloak of protection/armor in BG2. Is there similar thing for BG1?

Not that I have ever heard of.

It shouldn't be a difficult MOD to write (presuming, of course, that one knows how to write MODs). I wouldn't remove the item stacking limit; I would set the limits to be 40 or 50 for ammunition, 30 for gems, 20 for scrolls, and 5 for Potions. I would also edit the *.CRE files for the various random monsters you fight so that some of them use Slings and Crossbows, so you're not just finding millions and millions of free Arrows, but no Bolts or Bullets.

You know, I really need to learn how to script!

If I can learn WeiDu then I can make a heck of a mod, because I can do.....

1) Characters
2) Items
3) Spells
4) Classes and Kits

So when I learn to write dialog, I will make a hell of a mod!!!
