I think they were testing on the Sahuigi, only because they are found in the Mind Flayer tunnels in a couple of cells, although they could just be prisoners that the flayers captured as well and were using as gladiators.

I'm talking centuries and centuries before SoA, though. Illithid experiment on anything that moves... I seem to remember that the duergar were a race that were experimented upon, then escaped.
I know that the Githyanki are such a race; for some reason, I think the duergar are as well.
