Pickpocketing would make the most sense to me. I'd know more about which was the best way to shoplift if I did it more often, but I don't, because A) I almost always get caught when I try it, and B) All the good shops don't let you steal stuff anyway, and all the shops you CAN steal from don't have anything worth stealing. At MOST, you might get a Large Shield+1.
Having 100% in Pick Pockets might not be enough....I think I had Imoen that high, and she STILL got caught. It might be the total sum of all of the Thief's skills.

I'm afraid Six' is right, Ithaqua - crime doesn't pay. Well, not without the obligatory violence anyway. It must be something to do with me looking shifty, 'cause every time I try it its Oi, sunshine! You're nicked!

My Sig isn't for nothing you know (no, I had to pay for it, and I'm paying to this very day...)

if you get caught trying to swipe something from a store...just use a nymph cloak or charm person on the storekeep and anybody who saw you stealing...it'll make them friendly again for a time..and you can try to steal from them again, if you get caught again, repeat the process

Pickpocketing is the only skill used when stealing. It can be very profitable sometimes. If you pickpocket Chanthalas Ulbright in the cross-shaped temple in Baldur's Gate you can pick up a tome of wisdom, for example. So crime does pay in my view

Yah, I tried once to thieve from a store. It wasn't worth the hassle and lost reputation points.

Pickpocking is another matter altogether.
