Do you have any Potions of Genius or Potion of Mind Focusing? They will help to boost your INT score. Think of them as 'health' potions when you get hit by a Mind Flayer in melee.
Use Anomen and Jaheira to cast Chaotic Commands on your tanks. This will help to prevent Psionic Stun/Domination. Give all the best gear you have to the front-line fighters. Make their AC as low as possible, cast Defensive Harmony, Chant, Protection from Evil 10' Radius, etc... ... If you have any Potions of Agility, pass them to Minsc and Anomen, this will help improve their AC a lot. Anomen can also cast Draw Upon Holy Might. Your party is extremely low level to be in the Underdark, did you skip all the major subquests in the game? Even doing one will mean your average party level will be higher now. |

I've found that summoning several undead is fairly effective against mind flayers. That allows me to concentrate on the umber hulks first. BTW, chaotic commands is a wonderful spell in this situation.

Have spell casters summon Undead or Nishruu and make a bunch of triggers and sequencers with Magic Missles. They are physical attack!
Now stand about where you know you can't get any closer before they see you. If you want use Clairvoyance, Farsight, or Wizard Eye to spy on the enemies so you can pick a good spot. Select DEATH SPELL and place the mouse equidistant between the Hulks and click. Wait about half a second after chanting begins then quickly pause the game. Send in the Undead and any fighters, targetting only the Flayers and Illithids. Unpause. While the fight rages have you mages keep a stream of missles going or using Domination on your own men to give them back under your control(you can't talk to a Dominated character, but it will wear off eventually). Heck! I've posted a different response every time, and I know all of them work, so there's probably about a million ways to do this... |

Note: Magic Missile deals magical damage, and can be resisted by magic resistance.
