Short of using the Vanish spell, which I've only gotten to work for one of the two passages, how do you get past the two guardian statues in the altar room in Anephas' tomb? I know you can push them back into their respective passages, but I can't seem to push them back far enough to open up the passages they block.

Try pulling instead of pushing them. Use the Icon below the Steal Icon to select "Move" mode and then click on the guardians and backup. Click again to release them.
