Could I use gatekeeper to make a cleric/mage/theif (I'm bored) and then play the game through. Ok so say i beat the game with this character, could i export it into baldurs gate 2?

No. It is impossible to create class combinations that do not exist, such as Cleric/Thief/Mage, except though incredibly ugly means such as a hex editor, and the resulting character would probably crash the game anyway. Sorry to burst your bubble, but the truth's the truth.
As for "midly" hacked characters, importing them into BG2 will "fix" some of the hacks, but it might overlook others. For instance, in BG1 you can legally make a Human Fighter dualed to Enchanter. Carry the same character into BG2, and he becomes a plain old Fighter->Mage. But if you hacked yourself a Dwarven Paladin, he'll probably be just the same in BG2.

Probably, but you should really use Sword Coast keeper instead of Gate Keeper.
