Since you have SK, it would be easier for you to just read JI's creature file and find out all his statistics.

I'm looking at the Creature Browser in SK and see about 20 differen Jon Irenicus files. Not sure how to figure out which one is used. But, anyway, what does it mean to be a level 30/29 mage? I don't understand why there are two levels listed -- I don't see any other classes listed in SK for Jon.

It means that he become a level 30/29 Mage. Simple as that. Afterall he was the most talented of his kind.
