No, he doesn't. Unless you count the Umar Hills quest as one.

The only thing that happens to Minsc, which isn't so much a quest as it's an NPC interaction, is that
SPOILER ' ' ' ' ' ' ' ' ' ' ' When you have Aerie in your party, he will tell her about his loss of Dynaheir, the previous 'witch' he protected. He then asks her if she would like to become his new witch, to which she agrees. No quest, but put him together with a certain sword, plus jan or edwin, and it make for interesting intereaction ...

Itīs a terrible idea of the developers to let Aerie become Mincīs new witch, isnīt it? It bloody sucks to lose her to that damn rodent-brained berserk, so I decided(double-sigh) to kick drop him and never experienced all of the dialogues Minsc goes for. What a f(.&%"inī idea...
