Why don't more people eat/drink it?
It's good for health, is found in most things we eat, and is easy to incorporate into a diet.

Well, you know, soup. Also, it doesn't really taste like anything.

Bird bones are generally hollow. Marrow comes from the big long bones, like your femur.

I haven't really heard of the merits of eating bone marrow, except of course it's highly prized in times and places where diets were in need of more protein and fat. Not really an issue for most of the West now in that aspect. Does it have anything else going for it?
...
Just checked it out, It's got plenty of protein and monounsaturated fats, which reduces LDL cholesterol, which may or may not reduce risk of heart disease. Maybe the West in general needs it after all, though it grosses me out personally.

IT does taste pretty good as soup, never had it with anything else before though. Why do you ask?
