Earlier in the game I solved the warders' 4 riddles, but was unable to defeat them. Planning to come back later, I left the bottle of wine in the room with them. I'm back to try again, but the wine is gone. Does anyone know how I can get it back?

Unless you left it in a barrel or a chest, it will be gone forever. You'll have to face it and reload.

I had to cheat, but I solved the problem. Going back to a saved game that had the bottle of wine, I put the bottle in my main character's inventory and exported that character. That created a file in the Black Isle\Baldur's Gate\Characters directory. I opened the file in MS Developer's Studio (it helps to be a programmer, maybe another editor or word processor might work as well), and was able to see the items in her inventory. By process of elimination, I identified MISC1A as the bottle. Following the instructions on http://www.tgeweb.com/ironworks/bald..._builtin.shtml, I created the bottle of wine. I just defeated the warders. Woohoo!

Erm...... If you know about hex editing (You could have told us, couldn't you, as usually people don't - how about a less posh editor, wot wot? ), you could have simply changed something unimportant in your current savegame (baldur.GAM) like an arrow AROW01 into MISC1A (there are several lists of item codes on the ol' web) without going through all the trouble.
