I think I will be starting a new game with a standard greedy battle-loving dwarf He will dislike magic and anyone who uses such weakhearted fireworks and so there won't be any mages in the group. He will be CN, cause he is not into hurting people deliberately. Whatever the job is, he will ask for a reward. I am thinking about who to take along, since a lot of the good fighters are too lawful for this guy... Any advice?

Sk-ing people will be an option. Imoen for instance, she WILL become swashbuckler.

Instead of Shadowkeepering all the NPCs in the game to fit your specifications, have you considered making a multiplayer game and creating all the characters yourself?

My beloved anti-magic party was a multiplayer creation, and contained:
--a wizard slayer PC
--a trueclass fighter (fighter/thief would also work)
--a trueclass thief (swashbuckler would also work)
--a monk
--a kensai
--an undead hunter (he had priest spells, but I chose not to memorize any)

The only problem with a party without mages or clerics is the constant imbibing. You will know where to find healing potions and who sells the scrolls. (Only one party member could cast healing spells off scrolls--the monk.) But it's a strong group. By Chapter 5, the party could pretty much hack its way through anything in SoA, and by Chapter 8 could knock off just about everyone in ToB.

Just make sure to build that thief character right--it's the party's "mage" now. First and foremost, push Find Traps and Detect Illusions OVER 100%. Why, you ask? A thief uses DI with the "find traps" button. The game rolls on a d100 for this skill and if the game rolls your DI percentage or higher on the d100, all enemy illusion spells in the affected area (usually 10-20' around the thief) are gone. Poof. Just like that. Mirror Images, Misleads, Projected Images, Simulacra, Shadow Doors, (Improved) Invisibilities, even those invisibility potions favored by backstabbing thieves, all go bye-bye while your fighters beat the snot out of the unprotected enemy. As long as the thief has Find Traps turned on, DI will be active. Distribute the rest of the points where you wish--potions of perception and master thievery will take care of most jobs until your thief's skills improve.

Take Valygar as a Kensai (Two handed stuff or Throwing Daggers) and Korgan or Minsc as Barbarian. (FOA + DOE of course )

I would take Yoshimo with you as well, since you'll need a thief around until you rescue Imoen.

You might consider making your dwarf a barbarian or berserker in order to gain some spell immunities. Don't forget that some armor and shields also give spell resistances or immunities.

Pirengle's idea is also good. You won't be able to find enough non-lawful NPCs who don't use magic. Adding one or two you make yourself would allow you a full party.

PC
Korgan
Minsc
Valygar
Yoshi-Imoen
???

Berserker is a great kit that provides some powerful magic immunities, and could go well for your Dwarf. You didn't make it clear, though, whether you wanted just no Mages, no arcane magic, or no magic at all including arcane and clerical abilities. Paladins are probably out anyway since they're too lawful, but how about Bards or Rangers?

Personalitywise, I think the best matches for your character would be Korgan, Viconia, Minsc, Jan, and Haer'Dalis, though you'd have to do some heavy SK work to make their classes fit whatever your anti-magic rules are. Viconia would be a great assassin...

Well, thanks. I am not planning on creating any NPC's myself, since I'll lack party interaction, big bummer. Furthermore, I don't think I will take more than 5 people, preferably four. My dwarf would indeed be a berserker. Axes of course.

Valygar the kensai is a great idea, Viconia as the assassin is a great idea too, but I want Imoen as my swashbuckler, so I don't need the thief, it's a really cool idea though!

So:
Dwarven Berserker(axes/hammers)
Valygar Ranger(katanas, bastard swords)
Imoen Swashbuckler(Yoshimo)(long swords,short swords)
Anomen Fighter/Cleric (Maces, flails, with a failed test of course)
(a certain ToB NPC in the course of the game ofcourse)

My dwarf hates magic, but he has no objection to divine magic to aid him to fight stuff. Furthermore, he hates the idea of someone who goes atacking people from behind or flank them, so the kensai idea is off. I'll make valygar a normal ranger, dualwielding.

IMHO Valygar being a Stalker has much better usfelnuss than plain Ranger. But in the end... it is up to you to decide.

Ok, I've thrown this idea all over. I AM going to play a multiplayer party.

-Dwarven Berserker wielding axes, hammers and shields.
-Human Kensai wielding halberds and two-handed swords, maybe quarterstaves
-Halfling Swashbuckler singlewielding the spectacular bastard swords or maces
-Half-Orc Barbarian singlewielding anything blunt and savage
-Elven Ranger specialized in dualwielding any long blade weapon, does not want to wear anything better than chain mail.

A good distribution of races and weapons methinks.

ADD: Well, a bit of foolishness on my behalf has led me to think thieves could use bastard swords and maces, guess not. Back to long swords and clubs then...
