Is there some mod or shadow-keeper like program i can use to make a multiclass fighter/mage human? I want to play through Bg1 again as a fighter/mage, but i like my character to be human, and i hate elves (halfelf is no good)

That should be impossible, but try downloading Sword Coast Keeper. Create an elven multiclassed character, and then change him to human with SCK.

Lord Smite, I thing that humans are greatly over-rated, what you need is a nice Gnome Fighter/Illusionist - the're great. Alternatively why not dual-class a Fighter at Level 3 (or there abouts) that worked OK for me.

When i do rpg's, i see my main character as me, so i like to make it human (just my preference). I dont like dualing cause when you dual you STOP advancing in your first class. Gnomes are cool, but i dont want to be a gnome.
I think humans should be able to multi though, cause this just doesnt make sense: A human with 18s across the board is restricted to one class, but an elf with 3's across the board can be a f/m/t. Ahhh, the power of retards.

I'm not sure that Gatekeeper will allow you to do that. AFAIK, the limitation is not with the type of editor you are using, rather with the game code itself. Using "Human" as your race automatically limits your character class choices. If you put in F/M/T and some experience, I think you'll only go up in the Thief class. If you put Elf as your race, then you'll be multiclass. This might be something that you can change in the .2DA file, but don't quote me.
