It's for your own best. When you enter the mart, you will see an amnish guard right to the right of the entrance. If you watch him a bit, he will after a while say: "Dont try anything, I'm watching you" or something.
The Adventurers is just to famous, I guess.

see ya!

you can pickpocket a ring of regen from ribald but thats it

I guess because theres such good stuff there that it would be sort of game breaking if you got to just steal anything you wanted

Probably for the same reason that you can't steal from the "new" merchants. If you could steal the best items, it wouldn't be all that fair. BTW, try pickpocketing the owner

If you get the Infinity Enging Editor Pro you could edit the store ribald.sto (or something like that) and add the flag "PCs can steal", but only if you do this before you visit the store; after that, the store is located in the temp folder. You could also use NearInfinity (Vaskez pointed this lovely program out to me) to edit the store. Simply put, some stores are flagged to prevent theft; why, I don't know (they just are).

Another flag to investigate is "buy fenced goods"; most stores will not accept stolen goods.

Who needs to steal from Ribald? Just take your full set of wands to Jayce outside the Promenade and sell, steal, sell, steal, sell, steal them back until you're rich enough to buy whatever you need from Ribald.

I tried to pickpocket Ribald as well, at first my thief didn't succeed and the guards were called. Later I let my thief drink a potion of master thievery and it worked.

The reason you can't steal is simple: there is too much good stuff in one place. Being able to use those master thievery potions and shoplift from Ribald would not only be unrealistic, it would also create a group of godlike adventurers during the early stages of the game (and again, when he lets you into his backroom, after your return from the Underdark).

He's not the only one who's pick-proof. Deidre is, as well, and the IWD-influenced merchant who shows up at the Copper Coronet. So is the blacksmith in Trademeet--all for similar reasons.
