Why do you need more than 6 chars?? The more chars you have in your group, the less experience each one gets, and therefore level up more slowly...

You should be able to get a good balance of skills (fight/mage/cleric/thief) to finish the game easily with yourself plus 5 NPCs.

Seriously there's no way to get more than 5 NPCs at once to join your party.
If you are concerned about missing skills, you could start a multiplayer game and specify every character yourself, thus balancing the party as you want.
OR
Enable debug mode (add "debug mode = 1" under [Program options] in your baldur.ini) and add every char in the game to your party by pointing at him and pressing Ctrl+Q (This will still limit you to 6 chars)

Oh well. I just think it would be fun to be able to have every NPC in the game in your party, even if you never leveled up.
