OK, I finally got the fletchery skill for my lv9 ranger who afterwards immediately became a Samurai so now I can use those cool swords! My question is, in order to replicate arrows, do I have to have a bow equipped as well as arrows in my quiver? Or can I use the 2-handed No-Dachi? I hate to give up the use of 2-handed weapons or double strike!

You need to equip a bow, but it's worth it! It's the only way to get rich fast (apart from selling and re-selling arrows and exploiting the inn money-bug) and stay rich, especially if you bless the arrows at the Temple. As your Ranger/Samurai seems to be the only char in your party with the skill, what about equipping the bow when conditions are slack or just parking your party on the city wall to give him time to craft arrows?

You can't use DoubleStrike with a 2-handed weapon anyway, you need to equip two weapons. DoubleStrike is just the trait that enables you to learn Second Weapon. After a few levels of that you will see that your char starts using his second weapon.
My personal preference is waiting until the really good weapons show up (Nightblades, Tomonari Katana, Wizard's Blade etc and Main Gauche +2 or Wakizashi +2 as a second weapon) and blessing them up to the max.

But Fletchery is definately one of the best skills ever!

Yes,
fletchery is the best money maker in the game. From my on ranger making blessed dragon arrows, I have about 4-5 millon gold with each PC and about 50-75 million in the bank.
