Some of the 'most desireable' beers in the world are Lambic's... and they're made by leaving vats open so natural yeasts can ferment the batch.

I've seen the stuff in a specialty beer store for a hundred bucks for a four pack.

Is this any worse than having your beer fermented by yeast that was floating around Brussels?
