Im on chapter 2, if i go on to chapter 3 will all my quests be erased and if they are can i do them later? Thanks

Your quests won't be erased. They can be performed in chapters 3 and 6.

You can do the quests in chapter 3 and 6. However, all your journal-entries will be erased when you start a new chapter, so I suggest you finish all of them before going to the new chapter. You can still do the quests, and get new journal-entries, but all your previous information about the quest will be gone.

I'm pretty sure journal entries are still available when you start a new chapter (you just use the blue forward and backward arrows on the journal screen).

No, Sir Exxon is right about the entries being deleted when you begin a new chapter. IIRC all the entries/texts are deleted to prevent a pile-up off texts and quests that are already finished...

Have just checked: I'm in the underdark and the quests I haven't done from chapters 1, 2 and 3 are all still in my journal

ALL quests will be retained in the journal, completed or not.

They are categorised by name/date, chapters, unfinished and done.
