I know that elemental resistances often stack, but what about physical resistances to weapons?
Would a lvl 11 barbarian with 1/ damage resistance have 11 damage resistance if stoneskin was cast on it, or just the 10/+5 resistance that stoneskin gives? Re: elemental stacking - is there anything you've noticed that doesn't stack? All of Oswald's cold resistance items seem to stack with each other and with Aasimar cold resistance. I haven't found anything yet that doesn't stack (other than ability score adjustments due to spells/items), but I'm not very far into the game yet (Ice Temple, 2nd level).

Everything tacks accept for AC benefits, ability score bonuses and certain spells. A barbarian with 10/- damage resistance and another 10/+5 damage resistance would have 20 resistance to all weapons, and 10 resistance against +5 weapons. Even magical resistances, skill benefits and BAB bonuses stack.
