What happens if you attack her in the tavern (yes, before your characters would know who she is)? Can you beat her?

Let's see...the town turns against you, thus making it impossible to continue the game after the Vale. Your final meeting with her will be the same, as likely as not, but you'll be lucky if you just get to her. Arundel will probably kill you as soon as he finds you, which is pretty quickly.

Yeah. Don't attack anyone in the town. You can get away with attacking Orrick's goblin and maybe even Orrick himself, but that's it. However, if you attack Orrick now, you will miss out on a quest worth significant XP (talk to him about his studies).
Edit: Even if you can attack Orrick without turning the town against you and are willing to forgo the XP, it might matter to the reputation of any rangers or paladins you have. Second, Orrick is tough enough to whomp on a low level party. I attacked him once for fun, and he snuffed a character with Finger of Death (no resurrection).
