I like Jon Stewart's version:
Jesus told everyone "I am going to be crucified on Friday but I'll come back on Sunday and I don't want to see any eggs! Chickens either! I don't want to see any chickens or any eggs! I'm just sick of chickens and eggs!"
So because Jesus was the son of God and no one wanted to piss him off, they disguised all their chickens as bunnies and hid all the eggs, painting them to match their hiding places to make sure they wouldn't be seen.
