Two case fans should be enough, one intake, one exhaust. You want to use the front case fan for your intake and expell the hot air out the back. Take your time to make sure your wiring is nice and neat, and I would spring for some quality rounded IDE cables. They do a lot to improve air flow within the case. You should have: A CPU fan, video card fan, and a couple of case fans. The PS will have 1 or 2 fans built into it.
One of the biggest causes of computer crashes these days is an underpowered machine, ie. small power supply. If you're going to run state of the art hardware anything less than 350W is a waste of time. I'd look at at least 400W, maybe 450W. (Remember that keyword: Upgrade-ability) If you plan on running lots of add in cards, a couple of big hard drives, a couple of optical cards, a nice big, fat, juicy video card you're going to need lots of CLEAN power. PC Power and Cooling make some really nice power supplies. Take a look at some of the exotic PC builders such as Voodoo and Alienware. They don't put quality power supplies in their PC's for no reason. My main machine is a 3.0GHZ P4, Radeon 9700 Pro, 4 120GB WD Hard Drives striped in RAID 0+1 with a 450W PS. I run stock fans on the CPU (1), video card (1), and PS (2) with a front intake and rear exhaust fans. The only additional fan I have is mounted to cool the HD's. The CPU never hits higher than 38 Celsius at full load and the case is nice and quiet.
