I choose usually the creatures that make themselves what they are, like liches. They chose to become a lich, I am assuming and that makes their creation unnatural...and since I am a ranger...I thought that it would be cool to hate all unnatural entities before ever considering a living, natural being. What do you think?

Why undead? They're immune to most of the "racial enemy" bonuses, such as critical hits and some are incorporeal so they don't make noise and they're immune to mind influencing spells, so "taunt" bonsus won't work.

Here's a brief guidline:

Abberations - YES. This is a wide challenge-rating category of monsters and they're almost all tough and are almost always subject to everything your favored enemy feat will do.

Animals - NO. Animal empathy, dominate them, run them somewhere & leave them or have tem fight for you. Also, most animals are usually weak. Only Dire Animals are difficult in this area.

Beast - NO. A very small group of opponents. Not worth it.

Constructs - NO. They're like undead.

Dragons - Conditional YES. Except that dragons, and their relations, aren't as prolific enough (IMO) compared to the BG series where this category would have been perfect.

Elementals - NO. They're like undead.

Fey - NO. They're weak. If you have a problem with Fey creatures, pack up your game and sell it on ebay.

Giant - YES. And you'll use it quite a lot in Chapter 2.

Humanoids - (Dwarf, Elf, Gnome, Goblinoids, Orcs, Reptilians, Halflings, Half-orcs, Humans). YES & NO. Humans could be a big YES. The others I'm less enthused about, though half-orcs would really help in Chapter 1, for the prison.

Magical Beasts - YES. There may not always be a lot, but it is a huge category AND it includes ALL SUMMONED CREATURES.

Monsterous Humanoids - NO. They're usualy weak and are almost not present in the first two chapters. (Yuan-ti & minotaurs)

Outsiders - YES. BUT NOT until the end game. How many Balors will you see at level 1? And if you do, I think your racial enemy choice bonus will be the least of the things on your mind...

Shapechangers - Conditional YES. There are a TON of them in Chapter 2.

Vermin - YES. There are a lot of them in Chapters 1 & 2, and they pose a lot of difficulties for your ranger.

What I have chosen so far (in order) with my ranger: Vermin, Magical Beasts, Giants. At level 15 I'll take what seems to be appropriate for the range of enemies I'll be facing.

Giants. I love giant-hunting rangers almost as much as drow hunting high elves.

There must be lots of undeads. So why not undead is a good selection? And about dragons, are they many of them?

One of the big things about that bonus is the increased damage you do in combat to that category of creature. However, you only do that additional damage AGAINST CREATURES NOT IMMUNE TO CRITICAL HITS. Undead, elementals, constructs, etc. are all immune to critical hits, so you only get the bonus to the listed skills, not the damage. This makes the bonuses not as good against them.
You do still get the +'s to attack though. The TO HIT. Whether you do extra damage is just icing to the cake. )
