Con - Walk and see when ur tired, drink till you get drunk (love this one) combine results

Int - sazzies idea (gives me int 18 )
Wis - let other judge for that

I tried this many years ago using the old 1st edition rules. STR, as you say, is obvious. For INT I took the player's IQ, divided by 10, and rounded. For the other 4 stats I had each player write down what he thought they should be along with comments explaining why, then had the others do an anonymous vote on what they thought the stats should be. The average of each stat was the final score.

I get to play Pen&Paper for the first time today. I'm gonna be the dungeon master. (We're all rookies, and I *kinda* know what to do.) So i'll definitely think about using some of these.

PnP is way better then the CRPG's because it has no limitations that the comp. ones do. If you have no imagination though you may think otherwise.
