Well since you all were engaged in

LEWT DeWD3 ub3R talkin... look down at your shoes, and notice there tied together, where is your coin purse? Why is your maiden smiling so ravenshely as if fresh from a romance? Give chase my friend? I think not, for to follow the shadow is your folly, for the dark can be a dangerous place. Who are we you ask? We are the rogues.

Of course that is my humble opion

Best character for me is Fighter/Thief--duel class human. I switched his animation from fighter to Thief, and pretty much have a blast with him.

As far as weapons there are not realy any best weapon, it more like best weapon for the situation. Example is that there are some mean critters out there that take a certain type of weapon to hit them, and if your not trained into that weapon or don't have that type of weapon you could be hurting (or have to go and re-equip).
Best character? One that is your play style. Don't try and be a rogue if you want a fighter, don't be a mage if you want a fighter, don't be a fighter if you want to cast, etc. etc...

Hasted, stoneskined, Immune to magical attacks, -12AC haven, two sword weilding, fighter/mage. Elven of coarse. Game was a joke towards the end, though starting out in BG this class sucked big time.

I go alot of millage out of the following weapons as well.
Celistial Fury, Cloak of Reflection(mirroring?), +5 Holey Avenger, Flail of Ages, and eventually once I got them, The Equalizer, Krym Frier <--check that spelling!), and the girdles of giant strength. O ya and Minsc's 2-handed sword. Well not really his but it was just a crazy.

Again I'll say that Minsc made the game very enternaining. I also liked Aerie, and Keldorn.

Seriously,
Sword: Holy Avenger, with Blackrazor coming second (or first if you don't count the HA since not everyone can use it..)
Axe: Never used one in the game, since there are'nt really any REALLY good axes to be found. You can buy some though, so I'm told.
Maces: Mace of Disruption, but like Axes, they take a backseat to Swords and Katanas
Bows: Gesen Bow, since you dont have to clog up your inventory with arrows.
Arrows: Read Above.
Staves: Staff of the Magi (Right? I havent played for a while)
All oTher WeApoNS: Even though the Crom Faeyr is powerful as heck, I never really liked it. I'd go with the Celestial Fury and the allmighty Sling of Everad
Armor: This is a toughie..I like the Drow Armor best, and the Robe of Vecna
Shields: Most of my characters Dual Wield, and I dont like the Shield of Balduran, so I'd go with the Fortress Shield or the Shield of Reflection
Helms: I don't remember anything particularly spectacular..
Rings: The Various Rings of Wizardry, Kangaxxx's ring
Cloaks: Cloak of Mirroring, the Drow Piwafwi(sp) Cloaks
Boots: Boots of Speed, Boots of Stealth. Nothing really great either, just depends on your party and taste.
