Guys, my wife is from Chile! Today and tomorrow there will be traditional celebrations marking there independence of 1810. If there are any Chileans here let us have it My Waso side is ready to celebrate also. We have plenty of emponadas and Chilean wine ready for tonight.

1. Chilean flags are flown in every house
2.Music on radio stations..cueca-traditional music.
3. food..empanadas with mixed salads heavy on tomatos, and fuerritos (skewers of beef or pork with cebollas
4. drink..chicha( cider of grape or apple!)
5.more dancing!

In parks and squares(fondas) people fly kites, have sack races, spoon - egg races and dance for the rest of the night. They really have a great time. I have a recipe for you all.
4 potatos (medium) , one onion, salt, oil, and fresh parsley.
Cut onions into strips the long grain
Put salt on them and let them sit for five minutes-rinse under cold water sqishing them three times and fully drain water
boil potatos let them cool and then cut into medium pieces
wash and cut heavy pinch of fresh parsley
oil and salt as desired
let cool and serve
