Simon, no, you cannot permanently increase anyone's wisdom in the game other than by cheating but that doesn't really matter, as most priests in the game have moderately decent WIS.
As for making your character a monk, why not play the game through with your figther character first, so you can get to know the game, and then play it a second time with a monk (or anything you like). The game's so replayable that you won't be bored.

If you really want, there are acouple of monks in the game you can CHEAT into your party, but I wouldn't worry about it

I believe Jaheira has a piddling 14 Wis, and Aerie has 16 wis and 16 int. So, Aerie is useless as a priest and a mage. The only bonus that Aerie has, is that she can wear the robe of vecna and it speeds up all of her casting, including the cleric ones.

Its important too that a cleric has a nice con our dex, atleast 16
