Being new and just starting out, all I’ve got in my off hand is a dagger from the warrior’s guild. Is there an off hand sword out there near by, anything else that’s better or should I not bother with the off hand just yet?

There's no point in putting any weapon in your off hand until you've got the skill Double Strike and attribute points in 2nd Weapon.
The assassin's dagger is an excellent 2nd weapon. If you're unpatched, you can hold on to it, too.

What do you do with your other hand then?

Ermmmm.... I'm not sure I want to answer that question
But for me, I use it to hold that second weapon until I can use it. You can also put a shield there, but all a shield does is lets you block some attacks. If you have the fletchery skill, you could put a bow in there and start making arrows. Or even shoot bad guys. But at this point, you don't have fletchery. You'll get double-strike far sooner.

Unlike your main hand, the efficiency of your off hand depends on your skills. You can attack even without any skill but you need the Shield skill for parrying attacks and the 2nd Weapon skill for getting 2 attacks per round. Without these skills, your off hand isn't more than an inventory slot.
As far as the 2nd Weapon skill is concerned, it is guild level 4 (or 5?) skill. That means Ishad N'Ha. You will need Doublestrike trait (same guild level, same guilds). The 2nd weapon skill becomes efficient at skill level 8 or so. As far as the Shield skill is concerned, I have no experience. I am always using two weapons.

Skill for the shield can be acquired at any guild level. The bushi dojo and warrior's guild can teah you the doublestrike skill. I'm not 100% sure, but I think the rogue's guild can teach it too.

Hmmmm... I don't think the rogues' guild teaches it, but when I get back home to go gaming, I'll verify that.
And doublestrike does start to work at lower levels... just not very well. I saw one of the Den hit something with their second weapon last time...

One of three things happens when you have a bow in hand:
1. Nothing. 2. You shoot arrows at critters that are out of melee range. This can be really frustrating when you realize you just shot the dragon arrow you needed to give to Torin... 3. You make more arrows, up to 50, if you have the Fletchery trait (level 5, Warrior). If you don't have arrows in at least one of the slots on the right-hand side, or if you don't have Fletchery, nothing happens.

Making arrows sounds a good way to get money, must take a while to get up to 50. 5th level is a ways off though.
If I change my Warriors to a Barbarian and Paladin will I still get the chance to get the fletchery trait?
