I always loved the band of theives approach, just 4-6 theives, with a ton of potions. Not too bad in the beginning, tougher in the middle, and the insanely destructive at the end (provided you have the right scrolls, potions, etc. to keep alive).

another interesting mix:
4-5 fighters
(1 theif)
1 ninja
specialize the fighters in one weapon, but put two or three with sword so you can use the *light* sword, excallabur, fang, etc. at once. the ninja should be your only healer, and fight with shurikens, and some other sort of weapon (cane if you choose faerie, or whatever else). This group always proved to be a powerhouse at almost any level just from the raw damage. Not having haste or the buffer spells did hurt quite a bit in the middle though.

I made a party of 6 fighters once... it was actually kinda decent. Well, in fighting anyways... everything else didn't work at all though, like LockP and DisarmT. It's fun playing 6 fighters though.. fast leveling and you can vary their weapons. Bow only, Sword/Dagger(dual)/Bow, Mace/Sling, Polearm/Sling, Axe/Gun, Sword/Shield only (bloodlust). It's not too feasible to take it to end game though. I may try one day though...

Just because I had to, I made a solo monk to wander the world like Caine. The most disturbing part is when she Instant Kills and whole groups of things just fall before her. Ok...this doesn't happen TOO often, and it takes big piles of stamina potions to keep her going, but it's just too much fun.

...I just can't get over how quickly you level solo!
