I always surround him with summoned creatures, and equip everyone in my party with fire/acid arrows. He goes down soon enough that way

I believe that the defender is only +3 in BG1. And wasnt Frostbrand supposed to be +6 vs fire creaturer?

i got the defender +5 when pickpocketing him, (my own theif, had a 125% pickpocket)
