Since we probably cannot transplant human gene sequences into animals and subsequently back into people or graft animal gene sequences into humans, what is to stop us from implanting human gene sequences into animals? Starship troopers had something like that I believe, then they all got the crap blown out of them, but I digress. I would imagine there would be limits to gene transplanting, no?

Yes, there are many risks to cross-species transplatation; the most basic of these would be 1) the chromosome count, 2) the individual chromosome lengths, and 3) transpositions--our eye color might be on gene "h" but dog eye color might be on gene "k".
