I can't believe noone mentioned Arcanum. It sets in your terms nicely, except the fact that the only character you evolve is you, and your followers are auto-level. Seriously, give this one a try. If you like a HUGE world with TONS of possibilities and quests as well as that many ways to complete quests, this is your game.
