The Might and Magic Series is way up there, i'd recommend starting with M&M 6 and work your way up to M&M9.
That said, I'm playing M&M 3 and M&M4&5 together just now. All are fantastic, particularly M&M 7 and M&M 8. Baldurs gate 1 and 2 are unbeatable in terms of replayability and enjoyment. I didn't like Icewind 2. Someone mentioned Wizardry 8. Fair enough but with one big caveat. The combat system is turn based and really turned me off, play it if you have 18 hours of spare time a day, if you don't, the 20 minute battles every few yards might annoy you as it did me. Nobody mentioned Planescape: Torment, so I thought that I would add it. Especially good if you love interaction with NPCs and figuring out the plot more than combat.
