Me (Archer)
Jaheira (main tank, secondary cleric/druid)
Minsc (secondary tank)
Imoen (main mage, main thief)
Aerie (main cleric/druid, secondary mage)

And Anomen ran off and cause I'm in Suldanesselar I probably won't get him back. I'm considering taking Mazzy as another tank, or maybe Jan as a thief instead.
With a mage, you could dismiss Imoen for Jan so you get better thief skills, or Aerie for a pure cleric.
BTW, is it just me or is Mazzy one of the best NPC tanks in the game. If I remember correctly, her Dex and Con are both 18. That gives her a great AC and HP. Her Strength was lower, but that can easily be fixed with a girdle of Giant strength. This is all theoretic, though, because I've never had her in my party for a longer stretch of time.

As a swashbuckler, I use Aerie, Jaheira, Minsc, Edwin, and Yoshimo. I dualed Yoshimo to a fighter, and between the six weapons in my, Minsc and Yoshimo's hands, we do fine in a fight (Jaheria heals all the time when she's not using the sling).

Best self-created party was:

Aragorn (ranger)
Gandalf the Grey (mage/cleric)

Legolas (archer)
Gimli (barbarian)

If you're going to be a good-aligned mage/sorcerer (I recommend the sorcerer) you can do it in two ways. First one is to make a balanced party, with a thief, two or three good fighters and some clerics/druids. Additionally, you may want a second or a third wizard.

If you do, it'll probably look something like
Minsc
Keldorn
Aerie
Jan/Imoen
Jaheira
and you

More fun would be to create a party in which everyone can cast mage spells, like

you
Aerie
Jan
Nalia
maybe Haer'Dalis or Edwin (if you keep your reputation under 19)
and later on Imoen as well.

nope! you can get away with one fighter and a backup fighter ( like a cleric) and one mage is often enough for me. this leaves room for prehaps a druid or a second thief ( you can have a stealing thief and a fighting thief who is good with missile weapons) I got to the asylum with a single drow battle elf (fighter) and Yoshimo as a backup. ( along with the rest of my party)

my party can take out most things thrown at it here it is

Me (Fighter,can do 70 damage in one hit, no cheating)
Minsc (Damage absorbant,wipes up swords and arrows better than any other ranger)
Jaheira (good fighter druid)
Edwin (THE BEST mage in the game by far, when he gets to the level he can cast lvl 9 spells he gets 5!!!!!!!!)
imoen (secondry mage and theif - i just use her to disable traps and open locks)

Well, I think that if there was a perfect party the game would be a lot less interesting. However I suggest making yourself 3 good characters in multiplayer and assigning them to yourself,

1. The protagonist, a mage or sorceror (i prefer sorceror) as familiars are very useful (chaotic neutral cats are great)(elf).
2. A good thief (halfling)
3. A good cleric, priest of landather or Helm.

Also i suggest recruiting,

4. Minsc (we all love him)
5. Nalia (bach up mages are allways useful)don't even consider using her as a thief))
6. Keldorn (Great fighter, True sight and dispell magic are invaluble) with a priest of Helm you can save that 6th level true sight spell slot for something else))
