My favourite Fantasy authors are (in no particular order) :

* The Great ones :

Robin Hobb (The Farseer trilogy, and especially the Ship trilogy)
David Eddings
Robert Jordan (WOT)
Raymond E. Feist
Anne Mc Caffrey (Pern)
Weiss and Hickman (The Death Gate series is an absolutely must read)
Mercedes Lackey, for all the Valdemar series

* The maybe not 'great' but quite funny ones :
Terry Brooks, for the Landover series (not Shannara)
Gordon R. Dickson, for the Dragon Knight series (hilarious)
Jennifer Roberson, for the Sword-XXX books

I also like M.Z. Bradley, even some say it's girly stuff ...

The top two series (even above Fiest guys sorry, I love his stuff too) in sheer scope, complexity, detail, suspense...everything that makes fantasy great... are the Song of Ice and Fire series by George RR Martin and the Wheel of Time series by Jordan. You need LOTS of time for either series though. They are huge books and reading them more than once isn't boring because there are so many little plot twists and hints. Other great stuff:

Steven Brust - Vlad the assasin series and the Khaveren Romances
Zelazny - Chronicles of Amber
Orson Scott card - Tales of Alvin Maker series and if ya like sci fi Ender's Game
If you like Cyberpunk (like the Matrix) try William Gibson's books, starting with Neuromancer
There are a lot more I could list but those are some of the best

Aw, c'mon, Mil! Polgara and Belgarath books gave a lot of information to fill in some gaps. They were also good for a laugh at the differences in views of the two (they always seem to be at odds). My father bought the The Sapphire Rose for me when I was a kid and I loved it! It made me go out and spend every last dime of allowance for the next couple of years catching up and finishing the series.

Also, I don't think anyone has mentioned Katherine Kerr's Westland novels. There are about 10 or 13 in total, but a great read. The first one is Darkspell.
