In both these situations, what I would do is, when they join your party, go into Shadow Keeper and set their levels in the new classes to 1, and remove all proficiencies and spells from them. Figure out how many spells/proficiencies you'd get as a lvl 1 character in those classes, add them in ShadowKeeper, then level up in game, in my experience, this makes the most "natural" characters. I honestly have no idea how I'd do the Morituri.

EDIT: Should add, I believe Edwin gets more daily casts as a sorcerer, but not more known spells.

You'd be right. Same amount of known spells, just more daily castings.

thanks true moose. i'm wondering if i download the darkest day, would the new kits added by this show up in shadow keeper? because i found annother kit that may suffice instaed of the morituri

From what I've heard of The Darkest Day, it's too buggy to even attempt to play with. Still, if you're up for it, go for it.
