Actually, he should not be able to use the bow as a Cavalier, so stuck with Belt of Inertial Barrier 50%.

Just remember that you can always choose to juggle your equipment around before major fights. You do not necessarily need to be 100%+ resistant to all elements.

Here's my try for the Resistor character, I just changed a little Six's plan:

Fire: 20% Cavalier, 50% Ring of Elemental Mastery, 25% Dragon Helm, 25% Dragon Scale Shield = 120%
Poison: Cavaliers are immune from birth = 100%
Electricity: 50% Ring of Elemental Mastery, 25% Dragon Scale Shield, 25% Dragon Helm = 100%
Cold: 50% Blizzard Boots, 25% Dragon Scale Shield, 25% Dragon Helm = 100%
Acid: 20% Cavalier, 100% Sanchuudoku, 50% Shadow Dragon Scale, 25% Pitchwife = 95% for non-cheesy characters
Magic Damage: Cloak of Reflection = 100%

For the maximum magic and physical resistance you would have to check that Wizardslayer/Thief combo.

If you decide to use some sort of a fighter who can use Helm of The Rock, then you can fix that Acid problem too.

Some nitpicks: Dragon Scale Shield and Dragon Helmet are supposed to give you flat 25% boni not +25%
The Cloak of Reflections reflects electric damage not magical. You are possibly talking about the Cloak of Mirroring (a.k.a. Cloak of Cheese) which works like infinite Spell Turning. It will however not protect you from non-damaging magic (like Stun, Hold Person, Feeblemind,...) and thus Magic Resistance would still be needed.

Yes, I was thinking about Cloak of Mirroring (reflecting spells away).
I know that Dragon Scale Shield and Dragon Helm are supposed to set resistance but they don't, they add them. Try equiping them and you'll see.

Nope. They set them. But they can work cumulatively with other items, provided you equip them in the correct order:
Dragon Helm: Sets Fire Resistance to 25%. Ring of Fire Resistance: Adds 40% Fire Resistance. Result: 65% Fire Resistance.
Ring of Fire Resistance: Adds 40% Fire Resistance. Dragon Helm: Sets Fire Resistance to 25%. Since this figure is lower than the character's existing 40%, the computer ignores it. Result: 40% Fire Resistance.
