[/QUOTE]My poitn was that with 75% protection you will still suffer a quarter of the damage which may be enough for a sorcerer who can't heal and has low hp anyway. If your immunity is >100 you will actually be healed. (this attainable for some elements with some items, though I'm not sure if it's possible with a sorc).
Now low level spells like protection from acid will only protect you from one element but they'll make you completely immune and often this is what you need against one strong opponent (e.g. Dragon) with one main elemental weapon.
