You could play and enjoy the game with no fixpack and depending on your system, you may even be able to get away without the official patch. I wouldn't recommend it though, especialy if you intend to install any mods later on. You dont need to download all of the individual baldurdash fixes, the fixpack at the top contains them all.

Baldurdash hosts fixPACKS (the first files on the pages, all the other ones below are included) and Tweaks/Cheats which you should install of you want a certain feature.
For starters I'd suggest the common ToB Fixpack and the Grandmastery Patch (Bonus Merchants are on your Bonus CD if you got the collectors edition)
if you really want an XP cap remover that extends beyond the 8Mio from ToB get it from www.teambg.net along with the additional rules.
