Actually, I just played a dual-wielding Cavalier. I would actually recommend axes as your first specialization, simply because you do not get good bastard swords until later. Azuredge makes undead easy, and thrown axes are among the only ranged weapons that you can use. In addition, you can get 2 +3 axes relatively early in the game. The other great weapon to have proficiency in is flails/morningstars. You can get the both the Flail of Ages and the Defender of Easthaven early. Defender of Easthaven is a great off-hand weapon. The other big weapon is warhammer, for the Crom Faeyr. Eventually, you will want to get skill in bastard swords, because you get some great ones later on.

I started the game with 2 slots in two-weapon, 2 slots in axe, and 2 slots in flails, then added the final slot in two-weapon at 9th level. I decided not to put Crom Faeyr together (I wanted to spread out the strength items), so started from there putting slots in bastard swords.
