If you have both the alloy and the pure Illithium in your inventory when you visit Sarles, you can just drop the Illithium on the floor of the Jysstev's estate, talk to Sarles and give him the alloy, then pick up the real stuff after he splits.

Killing Sarles might get you the real metal back, as Pickpocketing can only get you items that are stored in the victim's Backpack, not actually equipped on their person. For instance, when was the last time you Pickpocketed a weapon right out of somebody's hands? But killing Sarles should definitely hurt your Rep, and hardly makes any sense anyway.
Then again--I propose a perfectly sensible way to please both Sir Sarles and Cromwell, simply by imposing a little logic. My question is this: Why the hell does Cromwell need TWO HUNDRED POUNDS of illithium to upgrade an EIGHT-POUND MACE??? The item says that the metal was only use to apply a thin coating onto the original weapon--why can't you simply break off the 1 or 2 pounds that Cromwell would need for that purpose, and make Sir Sarles perfectly happy with the other 198 pounds? This argument actually goes double, as Westley Weimer's Item Upgrade allows you to improve Azuredge via this method as well, which should result in 196 pounds for Sarles.

Cromwell chuckled to himself at the gullibility of the adventurer. Making sure he was not seen, he broke off a small part of the illithium ore and hid the rest in his secret stash.
"Are you sure you need so much, Cromwell?", the adventurer asked, worried that the fake ore would be needed to try and fool Sarles. "Oh yes, yes indeed! You see, illithium vapourises very quickly when it is exposed to great heat, so we need a healthy supply if we are to ensure that there is a proper coating on the weapon," Cromwell replied. It was all pure nonsense of course, but what does an average adventurer know about smithing anyway? Continuing with his casual deception, Cromwell inquired with wide open eyes, peering deeply into the adventurer's own, "You do want a good weapon right? One that can protect you from them Undead nasties?" "Er... yes. Yes I do." Pity not the silly adventurer, for the adventurer was destined for Godhood eventually. Losing a hundred over pounds of illithium seems trivial when you think about it. Nay my good reader, celebrate instead, the cunning of the Dwarf Cromwell, who makes a killing fleecing adventurers of their hard-earned money. One would come to realise that the real world operates much in the same way, where deception disguised as advertising is the way to riches. "Equaliser? Oh... that be a very good sword. 7500 gold only! It is a bargain!" |

That must be why he has no apprentice; He scares them all away. And maybe he has developed a spell named "Protection from Detect Evil". Hey, its possible.
