Cloudy, I'd have to back Attalus (or, more specifcally, his wife [img]smile.gif[/img] ) by saying that chicken is the best meat to put with green salad, IMHO. I usually can't stand cold meat, but chicken with lettuce and sliced cucumbers (I can't stand tomatoes

) goes very well.

Or you could make a soup

Cloudy, I found myself a favourite for leftover chicken meat during my second visit to Portugal (I think the dish is Spanish tohugh). Paella! Boil some rice with onions and saffron. Add peas when it has 3-4 minutes left. Then simply put the rice on a plate, add some shrimps, chicken and some paprika. Done!
