When you start as a low level monk, is it best to o in hand to hand, or give them some armour and weapons till they level up a bit?

I'd say u'r best sticking with just fists. You can use your stun hit then and you do fair amountof damage sometimes.

Yep, fists are the best for a monk, no matter if you are low or high levels

Hrm I am going to add 1 correction to the previous statements. The firsts are fine IF you can hit with them! If you are hitting as a +1 (or even worse no plus at all) weapon then you will not be able to hit some monsters. The sling of everard is a nice backup weapon if this is the case (or if you don't want to send your monk in hand to hand for some reason you can bust this out)

Do you get better with a weapon the more you use it?. If so then your best sticking with your fist. It just took me ages to kill that guy in the copper coronet who you can challenge but I did get a stun on him which makes it easier.

you don't get better as you use anything(you can only improve by putting prof points into that weapon type) but the monks fists improve as he goes up levels. early on they are sometimes not good enough to damage some monsters is all.
