It is easy enough to invisible past the three Guaths' guarding the door to the temple in the sewer with the half of rift piece but attacking them is instant death, at least for me.....is their anyway to kill them and is it even worth it??? maybe summon lots of nasties and let them do it for you??

Yes, monster summoning is helpful - not because your monsters will kill Gaunth's for you, but because you can kill Guanth' while they are busy killing your monsters Or try to kill them one by one - let them see you, then quickly step backward - if you are lucky enough not all of the three will be following you.
But the easiest way of dealing with all kinds of beholders is Shield of Balduran (you can buy it from Deirdre, Bonus-CD merchant in Adventurer's Mart). animate dead is also good. But I admit - fire elemental is greate against gauths. But unfortunately kind of useless against fulfledged beholders - single death spell kills it.

Try a Nishruu. If you do not have the spell as of yet, cast it of a scroll. These buggers get healed by magic and guess what ghauts and beholders use primaraly, yes magic. So send one of these in and attack with your tanks. They might get hit once or twice but the gauths will mostly go after the Nishruu. It is so funny to see them cast cause wounds on the nishruu and see in the bar that the nishruu gets healed.

too bad that beholder might use Death spell and kill that nishruu.

True, but still against the normal gauths they are an amazing distraction. And i killed one of the, uhm, more advanced beholders in ToB with a nishruu as the damage spounge.
