Any suggestion would be helpfull since I am new to 3E rules:

Aasimar Paladin of Helm- Should I dual her to Fighter? Can be done and still level up Paladin

Ghostwise Barbarian/Ranger

Half Orc Barbarian/Fighter Instead of the Fighter should I change it to Monk? By changing I mean deleting the char and starting that char over..

Drow Stormlord of Talos. Should I multi-class?

Tiefling Roogue/Ranger. Wanted the dual wielding and some spell casting.

Wild Elf Sorceress/Fighter. Thinking of starting her over and going Monk/Sorceress...

I don't know how far you've advanced, but I'll give general advice

4 fighter-lvls for the paladin will give access to weapon-specialization, so that will enough. Alternatively you can only use 1 lvl of Paladin and lvl up in fighter. And yes - a paladin of helm can gain new lvls after taking fighter-lvls.

halfling: a single lvl of ranger should do it (if you plan to dual-wield)

˝-orc: 4 lvls of fighter (as paladin)

Stormlord of Talos - No keep him single-class (goes for all pure spell-casters: wizard/sorcerer/druid/cleric)

Thiefling R/R - a well known combination. Just don't expect the ranger-spells to have any battle-winnning qualities.

Wild Elf - see Stormlord. Since you apparently already have taken fighter lvl(s) , I'd suggest you just take sorcerer lvls for now.

A bit light on magic for my taste, but this party should be able survive

In HoF mode, magic users are the ones who do most of the damage... the fighters will need healing pretty much of the time because they will go melee with foes and receive damage, so it is wise to keep that in mind.

Actually not that far, I've already re-started about 3 times, trying to get the right combination of chars...

For my Paladin, I did make her a Paladin of Helm at lvl 16 right now, HOF mode..I will add one lvl of Fighter for the specialization..

I did lvl 10 Barbarian(Preferred Class) and 7 lvls of Ranger for dual weild and two racial enemies.

Actually, she's lvl 13 Stormlord and lvl 2 fighter...I haven't added to fighter since the beginning.

Actually, she's lvl 9 Rogue and lvl 7 Ranger for Dual and two Racial enemies.. I know she's not a spell caster, but that's not what I use her for, mainly ranged attack and dual for upclose..

Actually, the Wild Elf is a lvl 10 Sorceress and lvl 8 monk. She has excellent AC and doesn't wear armor...

I know it's light on magic, but thats what I prefer, I'm prefer sword over sorcery, but I also know magic is needed sometimes..

I'm playing a monk/sorcerer right now and he is my weakest character. I started the party specifically for this monk/sorcerer because I thought it would be cool. Sounds great, but it ain't. I've noticed that monks in this game seem to be weaker than they were in BGII: a pure level sorcerer would roast a monk/sorcerer or a monk (even though high level monks get magic resistance). All-in-all I would recommend single-class characters for most of your party because they are more powerful in most cases.
